A salad just for kids!

Ah…Saturday…a day of relaxation…WRONG! I’m headed upstairs to tackle Madison’s closet today. It hasn’t been cleaned in forever and it is seriously out of control. Hopefully, we can get it done before lunch so I can work on client projects this afternoon.

So today’s blog is a short one, but one that’s kind of fun for kids. Madison had a friend over for dinner last night so I decided to go all out with dinner. I grilled shish kabobs (veg for me), baked potatoes, cut up a fresh pineapple, and made these little salad cups. I saw a picture of something like this in a magazine (probably in my chiropractor’s waiting room!), but I didn’t have the recipe so I just came up with my own. Super cute and the kids loved them. They aren’t big salad eaters, but they do love fresh vegetables, so they liked these bite-size salads that don’t have lettuce in them. The kids drizzled theirs with ranch dressing, but Jason and I had a quick balsamic vinaigrette on ours. They’re a little messy to eat, but what child doesn’t love that?!

Stuffed Cucumber Cups
makes 24

4 cucumbers
1/2 red bell pepper, diced small
1/2 yellow bell pepper, diced small
2 green onions, thinly sliced
1/4 cup shredded carrots
1 tablespoon minced fresh parsley
1/4 cup of your favorite salad dressing*

Cut the rounded end off of each cucumber. Using a potato peeler, peel off a few “stripes.” Slice each cucumber into 7 slices, about 1″ thick. Set aside 24 slices. Chop remaining cucumber into 1/4″ dice. In a small bowl, toss diced cucumber with peppers, green onions, shredded carrots and parsley. Season with salt and pepper. Set aside.

Using a small melon-baller or teaspoon, scoop out the center of each cucumber slice, leaving the sides and bottom still intact. Spoon a heaping tablespoon of the chopped vegetable mixture into each cucumber cup. To serve, drizzle with the dressing of your choice. Note: If serving these on a buffet, stir the dressing into the chopped vegetable mixture before stuffing it into the cucumber cups. Enjoy!

*This is what I tossed together quickly for a dressing:

Quick Vinaigrette
1 tablespoon olive oil
1/2 tablespoon balsamic vinegar
1/2 tablespoon red wine vinegar
1 tablespoon fresh lemon juice
1 tablespoon minced fresh parsley
1/8 teaspoon garlic powder
salt and pepper to taste
