Do you go ape over bananas and chocolate?

Well, here’s the perfect little treat for you, then!

My family eats a ton of bananas. They’re great in a packed lunch or for an afternoon snack. But if you really want to show your loved ones how crazy you are for them, whip up a few Chocolate-Dipped Banana Bites! My three little monkeys go ape over them – and they’re totally good for you.

This simple recipe has only three ingredients and can be made in a matter of minutes. I’m almost embarrassed by how easy this is, but they’re so tasty that I just had to share. You want ripe bananas – not the greenish yellow ones. Wait until your bunch has turned a solid yellow and has a few brown spots. You want that super-sweetness. If you want to up the antioxidant factor here, use dark chocolate. Also, you can use any kind of chopped nuts. I used pecans because that’s what I had on hand, but macadamia, walnuts, or even peanuts would be great on these.

I wrote the recipe for one banana so you can easily multiply the ingredients for more servings. If you double the recipe, you may need less than double the chocolate chips. I had a little melted chocolate left after I finished a single batch. I pop the dipped bananas into the freezer, but you can just chill them in the fridge to harden the chocolate, if you want. The frozen banana doesn’t get rock-hard in the freezer. The texture is more like ice cream when you first pull it out of the freezer. After the chocolate has hardened, just store them in the freezer (or fridge) in a plastic container with a lid. I don’t know how long they stay fresh in the freezer because they disappear too fast around here!

Chocolate-Dipped Banana Bites
makes about 6 bites

1 ripe banana
2/3 cup chocolate chips
handful of chopped nuts, lightly toasted

Lay a sheet of wax paper on a cutting board. Place chocolate chips in a straight-sided, microwave-safe coffee mug. Microwave for 1 minute. Stir well. Continue microwaving in 20 second increments, stirring after each cycle, until all chips are melted and smooth. Peel and slice banana into 1-inch chunks. Using a toothpick or small fork as a “handle,” dip one banana chunk into the chocolate, swirling to coat evenly. Lift out and let excess chocolate run off. Place carefully onto wax paper and remove toothpick or fork. Continue until all banana chunks are dipped. Sprinkle chopped nuts over the top. Place in freezer, uncovered. Freeze until solid and then move to a plastic storage container. Enjoy!

    They look good. My son is a crazy banana eater and even though he’s 20 now he will still love these beauties.
