Woo hoo! I think it’s working!

I already blogged earlier today, but I had to share some news. 

Checked my blood pressure Saturday night — 143/96.  

Checked my blood pressure Sunday night — 145/93. 
Checked my blood pressure today — 138/98. 
I'm below the 150/100 mark for three consecutive days! Woo hoo!
If you've been reading my blog, you probably know that my BP was around 170/120 when I went off the BP meds last November. You probably know that I eliminated all animal products from my diet in January when I was still fighting to get it under control. And you probably know that I've been stuck around 150/100 for the last month or two.
Today, I'm finally feeling like I might actually make it to 120/80 after all. Well…maybe.
My chiropractor told me in December to shoot for 140/90. That I will be in the safe zone if I can stay around there. My mom talked to her acupuncturist for me and she confirmed that 140/90 is perfectly acceptable and if I can get it there regularly, I'll be in good shape.
So, I'm sticking to this new vegan lifestyle for however long it takes. Maybe forever. I'm absolutely loving the foods I eat and I'm not missing meat at all. Last night, I even grilled a steak (for Jason and the kids) that we purchased from our new farmer and I had no desire to taste it.
Speaking of cooking dinner, a reader of my blog asked me to post what I have on the menu for the week. I always put together a list of dinners for the week and grocery shop from that. It helps me stay in my budget and it makes getting dinner on the table every day a whole lot easier. My reader said she struggles with ideas for meals and asked if I'd post what I'm doing. So here's this week's menu:
Monday – stuffed manicotti for the kids (already made in the freezer), pasta with sauce for me, salad and whole wheat dinner rolls
Tuesday – vegan chunky tomato soup and a new vegan sandwich I came up with (I'll blog the recipe if it passes inspection)
Wednesday – taco pasta and fresh pineapple (see note below)
Thursday – vegan shepherd's pie (new recipe from a diabetic cookbook I bought my mother-in-law), salad and watermelon
Friday – take out (since all the Cub Scouts are coming for a campfire at 7 p.m. and I will probably be exhausted from cleaning my house!)
Saturday – salmon burgers (mine made with tempeh), remoulade sauce, rice pilaf and steamed green beans
Note: Taco pasta is one of my kids' all-time favorites. It's like the easiest dinner ever. In a pot of boiling water, cook about 1/2 cup of whole wheat pasta for each person you're serving. In a medium skillet, brown 1/2 pound of ground beef. While that's cooking, saute onions and diced green peppers with a little olive oil in a large skillet. Stir in a can of no-salt diced tomatoes and a can of black beans (drained and rinsed) and season with chili powder, cumin, S&P and garlic powder. Then stir in the pasta. At this point, I pull out a big bowlful for me. Then stir the cooked ground beef into the skillet until it's mixed well. Serve hot.
The kids and Jason top theirs with shredded cheddar cheese, sour cream, lettuce and crushed tortilla chips. I top mine with vegan cheese, lettuce, crushed tortilla chips and guacamole. Super quick and easy, and they love it. Best of all, it's a cinch to make my serving vegan.
Honestly, even if you don't become a vegan, just try eliminating some meat from your diet and bumping up the amount of fruits and veggies you eat. I swear you'll feel better!
 
I think I'll go celebrate my new BP with one of those chocolatey no-bake cookies (if there are any left)!

    Thanks! I'll try to remember to post my menu on Mondays. Honestly, by making a menu on Sunday and shopping on Monday, the stress of getting dinner figured out and on the table every night is just about gone. Let me know how you do with it!
